What Is the White String Inside an Egg?

The mysterious white strand is called the chalaza (pronounced kuh-LAY-zuh).

The chalaza is a natural protein structure found inside every egg. Its job is to anchor the yolk in the center of the egg and keep it suspended within the egg white.

Think of it as nature’s built-in safety harness. Without it, the yolk would constantly bump against the shell and be more likely to break.

The chalaza forms two twisted cords attached to opposite sides of the yolk. Depending on the egg’s freshness, they may be easy to see or almost invisible.

Why Fresh Eggs Have More Visible Chalazae

Here’s something that surprises many people: a visible chalaza is actually a sign of freshness.

In very fresh eggs, the chalaza is thicker, stronger, and easier to notice. As eggs age, the protein structures gradually weaken and become less visible.
