These Mini Meatloaf Muffins are baked in a standard muffin tin, which helps them cook more quickly than a large loaf while naturally creating individual portions.

The classic version uses ground beef, breadcrumbs, Parmesan, vegetables, milk, egg, ketchup, Worcestershire sauce, and herbs. For those who prefer a meat-free option, a lentil-and-mushroom variation offers a hearty texture and savory flavor that works beautifully with the same glaze.

Vegetarian Meatloaf Muffin Option

Use vegetarian Worcestershire sauce or a small amount of soy sauce in place of traditional Worcestershire sauce if needed.

Divide the mixture evenly among the 12 muffin cups.

Gently press each portion into the cup without compacting it too firmly.

Flatten the tops slightly so the glaze can sit evenly on each muffin.

Step 5: Prepare the Glaze

In a small bowl, stir together the ketchup, brown sugar, and mustard until smooth.

Spoon a small amount over each meatloaf muffin and spread it across the top.
