  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and cook for about 5 minutes until softened.
  3. Stir in the garlic and cook for another minute.
  4. Add the ground meat and cook until browned, breaking it apart with a spoon.
  5. Add the chopped carrot and cook for another 2–3 minutes.
  6. Transfer the cooked meat mixture to the slow cooker.
  7. Add the shredded cabbage, diced tomatoes, beef broth, tomato paste, thyme, basil, salt, and pepper.
  8. Stir everything together until well combined.
  9. Cover and cook on Low for 5–6 hours or High for 2½–3 hours, until the cabbage becomes tender.
  10. About 20–30 minutes before serving, cook the macaroni separately until just al dente according to the package directions.
  11. Drain the macaroni and stir it into the slow cooker.
  12. Cook for another 15–20 minutes so the pasta absorbs some of the flavorful sauce.
  13. Taste and adjust seasoning before serving.

This method helps prevent the pasta from becoming overly soft during the long cooking process while still allowing it to absorb the rich flavors before serving.
