Making ice cream at home is easier than many people imagine. With a few basic ingredients and no ice cream machine, you can prepare a creamy frozen dessert that is rich, smooth, and easy to customize.
This simple no-churn recipe uses whipped cream and sweetened condensed milk to create a light yet creamy texture. Once you understand the basic method, you can add fruit, chocolate, cookies, nuts, caramel, or almost any flavor you enjoy.
Ingredients
- 2 cups heavy whipping cream: Keep it very cold until you are ready to whip it.
- 1 can sweetened condensed milk, about 14 ounces: This adds sweetness and helps create a smooth texture.
- 1 to 2 teaspoons vanilla extract: Adjust according to your taste.
- Optional flavor additions: Chocolate chips, crushed cookies, fruit puree, caramel sauce, chopped nuts, or other preferred mix-ins.
Tools You Will Need
- A large mixing bowl
- An electric hand mixer, stand mixer, or sturdy whisk
- A flexible spatula
- An airtight freezer-safe container
Step 1: Chill Your Equipment
For the best results, place the mixing bowl and mixer beaters in the refrigerator for about 15 minutes before beginning.
Cold equipment helps the heavy cream whip more quickly and hold its shape. The cream itself should remain refrigerated until the moment you use it.
Step 2: Whip the Heavy Cream
Pour the cold heavy cream into the chilled mixing bowl.
Beat it on medium speed until the cream begins to thicken. Increase the speed gradually and continue whipping until stiff peaks form.
Stiff peaks mean that when the beaters are lifted, the cream stands upright and keeps its shape. Stop mixing as soon as this stage is reached.
Do not continue whipping for too long, as overmixed cream can become grainy and eventually turn into butter.
Step 3: Combine the Condensed Milk and Vanilla
In a separate bowl, stir the sweetened condensed milk together with the vanilla extract.
Mixing the vanilla into the condensed milk first helps distribute the flavor evenly throughout the ice cream base.
Step 4: Fold the Mixtures Together
Add a small portion of the whipped cream to the condensed milk and stir gently to lighten it.
Pour the lightened condensed milk mixture into the remaining whipped cream.
Using a spatula, fold the ingredients together with slow, sweeping movements. Scrape down the side of the bowl, move the spatula through the center, and lift the mixture from the bottom.
Continue only until no visible streaks remain. Avoid stirring vigorously because this can remove the air that gives the finished ice cream its soft texture.
The folding technique is the detail that determines whether your ice cream stays light and creamy or becomes dense—here is how to finish the process perfectly.
